A Serving Heart and Enchiladas

My sister was just here to visit.  So she will be reason for a lot of my postings for a while.  Right before she came I was so sick… just a cold, but it was horrible.  I had no energy my body was so tired, my brain couldn’t keep up with the business of the house.  The kids were sick as well but they usually seem to make it through with out such exhaustion.

Anyway my story is about her and her cooking.  She also has 4 children the oldest 12 and the youngest going on 3.  So because I didn’t even have energy to clean the house before she got here, she just took care of things.  She was awesome!

She is moving in a week and spent a whole week packing up her household of 6, and then came here and ended up taking care of my house and my 4 kids… meals, and helping me get my music recorded… she served me in so many ways.

She blames it on her inability to sit still but I know it is mostly her big heart.  She is just so sweet!  She uses her extra energy for good, for God’s work!  :)

I think her recipes deserve to be first on my site because of this.  She made Enchiladas one night and they were way better than mine, because mine get soggy in the middle.  So here is her simple but very good recipe.

Ingredients:

1lb of lean beef
Tomato Sauce
Powder Enchilada Mix
Onion
Cheese
Tortillas
Black Olives (optional)

Directions:

~Brown meat and add chili powder (for optional spicy kick)… or seasoning salt will do.
~Chop onion small and add to the meat.
~Add 4 tbsp Enchilada powder into the meat for flavor and the rest into the tomato sauce, set aside.
~Cut tortillas into small pieces set aside
~Next shred cheese.
~Use a 9 x 13 casserole dish and layer the dish with tortillas, then meat, then tomato sauce, then cheese… keep layering until ingredients are gone.
~Cook for about  35 min. at 425 degrees… covered with tin foil..
~10 minutes before it is done, take the tin foil off to brown the top.

It fed 10 of us.   For really good left overs you can heat it up under the broiler on low with some extra cheese on top… Yummy!!!
