<p><img style="float: left; margin-right: 11px;" src="http://jennastorms.com/wp-content/uploads/2009/06/800.jpg" alt="" width="300" height="250" />I think it is time for another recipe.  This is one I had really never thought of or considered until I recently visited my little sister.  She made me some fruit salsa.  It was yummy, and fun to do.</p>
<p>It is colorful, and smells of exotic fruit&#8230; something you would find on a small serving table next to a beach chair that is occupied by a women&#8230; oh i don&#8217;t know about my age, with her cute and tasteful beach attire, getting a tan and enjoying her kids play from a far.   The waves crashing up on the shore line, palm trees blowing in the gentle breeze, kids building sand castles, while she is nibbles cinnamon tortilla chips dipped in fruit salsa made by her and her lovely children earlier that day&#8230;aahhh, that is the life.</p>
<p>Okay back to reality&#8230; this is my recipe!  My kids and I perfected it to our liking, so we get to claim it!</p>
<p><strong>Ingredients:</strong></p>
<p><em>1 Green Apple</em></p>
<p><em>1 Peach</em></p>
<p><em>2 Kiwis</em></p>
<p><em>10 strawberries</em></p>
<p><em>3 tbsp fruit preserves</em> (any kind of canned fruit syrup will work)</p>
<p><em>1 tbsp sugar</em></p>
<p><em>1/2 tbsp brown sugar</em></p>
<p>You basically cut it up small enough to put in a food processor.  Any machine you have that will cut it up into tiny pieces.  You also add the sugar and juice right to the mixer you are using.</p>
<p>It has to look like salsa to be salsa.  I took a few pics of my own salsa so if they turn out you will see.</p>
<p>Then you must chill it.  I would say at least 15 minutes, I think it is best cold.  So if you can&#8217;t wait then you won&#8217;t have the TRUE beach side snack!  <img src='http://jennastorms.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>Now for the cinnamon tortillas that go with it.  You need some thing to dip in the fruity salsa right???</p>
<p><strong>Preheat the oven to 350 degrees.</strong></p>
<p>I would like to give you a heads up that if you don&#8217;t have a double oven or huge cookie sheets&#8230; they take a while depending on how many you make.  So you might want to get these started first.</p>
<p>You take flour tortillas, you can spray them with some Pam or brush them with spreadable margarine or butter.  Then you mix cinnamon and sugar.  I like sweet cinnamon, so I make the mix a pretty light cinnamon color&#8230; I don&#8217;t measure but I am sure everyone already knows the consistency they like.</p>
<p>So you sprinkle the buttered tortillas with the mix of cinnamon and sugar and then use a pizza cutter to slice the tortilla 4 times into 8ths.  Put them on a cookie sheet&#8230; I like to put tin foil down first just for the mess factor.  Cook them for 7-10 minutes.  You will know they are almost done when they start to curl a bit and brown.  You want them crispy not chewy, and you don&#8217;t want them burnt&#8230; burnt cinnimon is gross!</p>
<p>Depending on your oven you will probably have to watch the first batch but once you get the hang of it, you will know how long your oven takes.  I also want to say&#8230; make as many as you think you will need, they are good as left overs, and my kids go through them like a bag of chips so I have no idea how to determine how many to make.</p>
<p>A tortilla makes 8 chips so serving wise that is probably enough for 1 person, if you are measuring.  This recipe serves about 7, again depending on how much they eat!  <img src='http://jennastorms.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p>Here is a cheap way to make pizza with just about any thing in your fridge.  Who doesn&#8217;t have tortillas in their fridge?  Better yet&#8230; who does not like pizza?</p>
<p>You will be using a red or white sauce, depending on what you have, like, or want.</p>
<p>I think depending on the toppings will depend on the sauce, or again&#8230; what you have in your fridge.</p>
<p>Preheat the oven to 350 degrees or I just put it on BROIL (low NOT high)</p>
<p>Bake you tortilla for few minutes, just brown it.</p>
<p>Now all you have to do is top your tortilla.  You can use chopped up lunch meat, pepperoni, veggies or both.  You can put just about any thing you want on it.  Any combination of toppings you like on a pizza.  Then just top it and warm up every thing on the tortilla.  Don&#8217;t put too much cheese, it gets too greasy.</p>
<p>Make it more manageable by cutting everything small so it doesn&#8217;t weigh the tortilla down too much.</p>
<p>Kids love this because they get to pick their own stuff.  Very fun!  You can also put herbs or seasoning on your sauce with your toppings.  It is really fun to play and figure out what you like.  Easier and quicker than a pizza.</p>

<p>My sister was just here to visit.  So she will be reason for a lot of my postings for a while.  Right before she came I was so sick&#8230; just a cold, but it was horrible.  I had no energy my body was so tired, my brain couldn&#8217;t keep up with the business of the house.  The kids were sick as well but they usually seem to make it through with out such exhaustion.</p>
<p>Anyway my story is about her and her cooking.  She also has 4 children the oldest 12 and the youngest going on 3.  So because I didn&#8217;t even have energy to clean the house before she got here, she just took care of things.  She was awesome!</p>
<p>She is moving in a week and spent a whole week packing up her household of 6, and then came here and ended up taking care of my house and my 4 kids&#8230; meals, and helping me get my music recorded&#8230; she served me in so many ways.</p>
<p>She blames it on her inability to sit still but I know it is mostly her big heart.  She is just so sweet!  She uses her extra energy for good, for God&#8217;s work!  <img src='http://jennastorms.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>I think her recipes deserve to be first on my site because of this.  She made Enchiladas one night and they were way better than mine, because mine get soggy in the middle.  So here is her simple but very good recipe.</p>
<p><span style="color: #000000;"><strong>Ingredients:</strong></span></p>
<div><span style="color: #003366;">1lb of lean beef</span></div>
<div><span style="color: #003366;">Tomato Sauce</span></div>
<div><span style="color: #003366;">Powder Enchilada Mix</span></div>
<div><span style="color: #003366;">Onion</span></div>
<div><span style="color: #003366;">Cheese</span></div>
<div><span style="color: #003366;">Tortillas</span></div>
<div><span style="color: #003366;">Black Olives (optional)</span></div>
<div><br /></div>
<div><span style="color: #000000;"><strong>Directions:</strong><br /></span></div>
<div><br /></div>
<div><span style="color: #003366;">~Brown meat and add chili powder (for optional spicy kick)&#8230; or seasoning salt will do.</span></div>
<div><span style="color: #003366;">~Chop onion small and add to the meat.</span></div>
<div><span style="color: #003366;">~Add 4 tbsp Enchilada powder into the meat for flavor and the rest into the tomato sauce, set aside.</span></div>
<div><span style="color: #003366;">~Cut tortillas into small pieces set aside</span></div>
<div><span style="color: #003366;">~Next shred cheese.</span></div>
<div><span style="color: #003366;">~Use a 9 x 13 casserole dish and layer the dish with tortillas, then meat, then tomato sauce, then cheese&#8230; keep layering until ingredients are gone.</span></div>
<div><span style="color: #003366;">~Cook for about  35 min. at 425 degrees&#8230; covered with tin foil..</span></div>
<div><span style="color: #003366;">~10 minutes before it is done, take the tin foil off to brown the top.</span></div>

<div>It fed 10 of us.   For really good left overs you can heat it up under the broiler on low with some extra cheese on top&#8230; Yummy!!!<br /></div>

<p>I am still brainstorming this site, so as I am in the kitchen tonight cooking dinner&#8230;I realized that is another category I need to add.  Cooking is a huge part of my life, due to the fact I am always in that kitchen.  Not by choice but because I have hungry mouths to feed.</p>
<p>Our household is not one where the kids have freedom to go in the kitchen and eat what they want when ever they want.  First of all it would be very expensive, and second of all I don&#8217;t think it promotes healthy eating behavior for kids.</p>
<p>I am not saying I never eat the wrong thing or never over.  I am just saying if you haven&#8217;t found out through experience yet, children aren&#8217;t very good at self control.  I think after baby-hood it has to be learned.  That is a huge problem in America&#8230;obesity.  So in our family I am in the kitchen being little miss &#8216;what am I going to feed them today?&#8217;</p>
<p>Any way this all leads me to the recipes.  I have come up with so many of my own, that are easy to prepare, are cheap, and taste pretty stinken good.  I can&#8217;t say they are low fat, or extremely healthy, but I can offer this&#8230;just don&#8217;t eat too much.  <img src='http://jennastorms.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
